Southwestern-Style Guacamole

You can serve this spicy dish as a dip or as a first course on shredded lettuce.

Ingredients
  

  • 1 small ripe avocado
  • 2 tbsp plain low-fat yogurt
  • 2 medium-size ripe tomatoes, peeled, cored, seeded, and chopped
  • 1/4 cup minced fresh coriander or parsley
  • 1/2 tsp ground coriander
  • 1/2 small red union, chopped fine
  • 4 tsp lime juice
  • 1 clove garlic, minced
  • 1/2 small jalapeño pepper, seeded and chopped fine

Instructions
 

  • Place the avocado in a large bowl and mash it with a potato masher until almost smooth, leaving a few lumps for texture. Mix in the remaining ingredients.

Notes

Serve with tortilla chips, or lighten it up with sliced jicama for dipping!  Delicious and full of healthy fats.
